Paneer Tikka

Spicy yogurt marinated cottage cheese (paneer) cooked on a stove top or grilled in an oven, makes a great appetizer/ side dish.

Paneer Tikka is definitely one of the favorite appetizers for vegetarians in North India. It not only offers a great flavor because of the amazing mix of spices used in the recipes but the spices also provide great health benefits. This is a quick recipe with cook time of less than 30 minutes and can be made both on stove top using a pan or in oven. So, what are you waiting for- try this recipe and tell me how you like it.

Ingredients:
300 grams paneer (cottage cheese), cut into cubes
1 large bell pepper or capsicum, cut into squares
1 large onion, cut into squares
1 large tomato, cut into squares- optional

Marinade:
2 cups of thick yogurt (dahi)
3 tablespoon besan (gram flour)
½ teaspoon turmeric powder (haldi)
½ teaspoon black pepper powder (kali mirch)
½ teaspoon carom seeds (ajwain)
½ teaspoon dry fenugreek leaves- crushed (kasuri methi)
1 teaspoon coriander powder (dhania powder)
1 teaspoon cumin powder (jeera powder)
1 teaspoon chaat masala powder
1 teaspoon garam masala or tandoori masala powder
1 teaspoon dry mango powder (amchur powder)
2 teaspoon red chili powder
1 tablespoon ginger garlic paste (adrak lahsun ka paste)
Juice of 1 lime
2 to 3 tablespoon oil or as required
¾ teaspoon regular salt or rock salt or add as required

Method:
1. Cut the paneer into 1/2 inch x 1 inch cubes. Cut the bell pepper and tomatoes into squares. Remove the seeds from the tomatoes. Also, cut the onions in quadrants and remove each layer one by one. Keep all the cut veggies aside.
2. To prepare the marinade, first whisk the thick yogurt till smooth.
3. Add besan/gram flour, all the powdered spices, ginger-garlic paste, lime juice and salt. Mix well. Adjust the spices to taste.
4. Add the diced veggies along with paneer cubes. Mix well so the marinade coats the paneer and veggies evenly. Cover and keep in the fridge for about an hour.
5. Heat 1 tbsp oil in a non stick pan. Place the paneer and veggies coated with marinade in the pan. Cook at a low flame or medium flame. Do so in batches if required using about 1 tbsp oil each time.
6. When one side gets browned, turn over gently. Paneer will be done quicker so, remove the paneer cubes as soon as they are golden and done. You can cook the veggies for longer. When done, put aside in a plate.
Alternatively, put the paneer and veggies on skewer, spray oil and cook in oven.
7. Skewer the fried paneer cubes and veggies on to skewers or toothpick. Sprinkle some chaat masala & lemon juice on the paneer tikka and serve with onions and mint chutney.
