Stuffed Egg Sandwich

What’s your go-to recipe for a lazy weekend Brunch?
If you still thinking, then maybe try my favorite Vegetable Cheese Stuffed Egg Sandwich.

Extremely healthy and filling, this sandwich is quick to make with any leftover veggies in your fridge and some cheese and eggs. Do try and leave your comments.

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 2-3

Ingredients:
½ cup chopped spinach
½ cup chopped carrots
½ cup chopped onion/ green onions
½ cup chopped green capsicum/ bell pepper
1-2 chopped green chillies, optional
½ cup mozzarella cheese
6 bread slices, cut the sides and flatten by pressing between hands
5-6 beaten eggs
2 tablespoon milk
1 teaspoon red chilli powder (reduce if adding green chillies)
½ teaspoon garam masala or other seasoning mixes
Pinch of Pepper
Salt to taste
Chopped coriander/ cilantro to garnish

Method:

  1. Mix ½ cup each chopped spinach, chopped carrots, chopped onions, chopped bell peppers, and cheese. Season with salt and pepper. Mix and set aside.
  2. Cut the edges of the bread slices and flatten by pressing between hands.
  3. Now, add the vegetable cheese mix onto a bread slice. Cover with another bread slice. Press between hands again to the veg-cheese stuffed sandwich binds together well enough. Keep aside.
  4. Break eggs in the bowl. Add the milk and seasonings. Mix well.
  5. In a large heated non-stick pan, add oil. Then add 1/3 of the egg mix.
  6. When the egg is half cooked, press the veg-cheese stuffed sandwich between hands and place in the center.
  7. Now, wrap the egg around the sandwich and let it cook.
  8. After a few minutes flip and cook the other side. When completely cooked remove into a plate.
  9. Cut the sandwich diagonally, garnish with chopped coriander/ cilantro and serve.

Recipe Notes:

  1. Feel free to use other vegetables of your choice to make the stuffing.
  2. Remember to use the largest non-stick pan in your kitchen. The egg base has to be big so it can wrap well around all the edges of the veg-cheese stuffed sandwich.
    If you don’t have a big pan and want to cook in a regular sized pan, cut the veg-cheese stuffed sandwich in half before placing on the egg omelet in the pan.
